Ingredients
- Grape Tomatoes - halved
- 1 Ripe Avocado - cubed
- Fresh Mozzarella - cubed
- Arugula
- Fresh Lemon Juice
- Olive oil
Preparation
Step 1
In bowl, add tomatoes, mozzarella, avocado (reserve a couple cubes for dressing), and arugula.
Dressing: Mix olive oil (2/3's) and lemon juice (1/3's), salt & pepper). Smash reserved avocado and mix into dressing until creamy.
Mix dressing into salad and toss.
