  • 3 bunches green onions
  • 1 bunch celery
  • 4 large regular onions
  • 3 packages sliced okra
  • sausage
  • 1 turkey (use leftover including bones)
  • salt and pepper
  • roux

Preparation

Step 1

Put remainder of turkey in a large pot. Cover with water. Cook with salt & pepper and above seasonings (except sausage & okra) and salt & pepper until meat falls off the bone. (3 plus hours) Drain, retaining liquid, and remove all bones. Make a roux, combine with above liquid and meat, add sausage & okra.
