Pineapple Tea

  • 1/4 cup unsweetened instant tea
  • 2 cups sugar
  • 4 cups boiling water
  • 8 cups unsweetened pineapple juice
  • 3 cups water
  • 1 cup lemon juice
  • Maraschino cherries
  • Pineapple chunks
  • Garnish: Fresh mint sprigs

Step 1

Combine tea and sugar; add boiling water, stirring to dissolve. Add pineapple juice, water, and lemon juice; chill.

Fill individual sections of 2 ice-cube trays with ¼ inch of water; place in freezer and freeze until firm.

Place a cherry in center of each section in 1 tray; repeat procedure with pineapple chunks in other tray. Fill each section with ¼ inch of water; freeze until firm

Fill sections completely with additional water; freeze until firm. Serve tea over fruit ice cubes; garnish, if desired.
