Crawfish Casserole

Ingredients

  • 1 large onion chopped
  • 1 large green bell pepper chopped
  • 6 cloves garlic chopped or minced
  • 1 stick butter
  • 5 to 6 cups cooked rice
  • 2 pounds crawfish tails
  • 1 (16 oz) can Rotel green chilis
  • 1 pound Velveeta cheese sliced

Step 1

Saute onions, green pepper, and garlic in butter. Mix all remaining ingredients with seasonings; you may not want to use all of the rice if it looks too dry, if it looks too liquidy, spoon rice into casserole and discard remaining liquid. Layer in long casserole with 3/4 to 1 pound of sliced velveeta -2 layers each, rice mix & cheese. Bake at 350 F for 30 minutes.
