Ingredients
- 4 c. chicken stock
- 2 cloves garlic, minced
- 1 c. yellow cornmeal, preferably stone ground
- 1 T. salt
- 1 tsp pepper
- 1 c. parmesan, freshly grated
- 1/4 c. creme fraiche
- 2 T. butter
- grated parmesan

Preparation
Step 1
Bring stock and garlic to a boil. Reduce heat to med-low and very slowly whisk in cornmeal, whisking constantly to make sure there are no lumps. Switch to a wooden spoon and add the salt and pepper. Simmer stirring constantly for 10 minutes until thick, making sure you scrape the bottom of the pan while stirring. Remove from heat and stir in parmesan, creme fraiche and butter. Taste for seasonings and serve hot with extra parmesan.
