Bacon Braised Green Beans

Ingredients
- 2 T. olive oil
- 12 slices bacon, diced
- 1 c. thinly sliced onion
- 2 T. sliced garlic
- 4 lbs. green beans, rinsed, ends trimmed
- 2 c. chicken stock, canned low-sodium (or water)
- 2 t. salt
- 1 t. freshly ground black pepper

Step 1
Set dutch oven over medium heat and add olive oil. Once oil is hot, add bacon and cook, stirring occasionally, until browned (about 5 minutes). Add onion and garlic, stirring occasionally, until onions are translucent (about 3-4 minutes). Add green beans, toss to combine with the bacon and onions. Increase the heat to medium high and add the chicken broth. As soon as the broth begins to boil, place the lid on the pot and cook the beans (for about 15 minutes). Remove the lid, season with salt and pepper. Replace the lid and cook until the beans are tender (another 8-10 minutes).
Makes 12 servings.
