Ingredients
- 1 1/3 cups skim milk
- 1 cup cornmeal
- 3 Tbsp. vegetable oil, preferably canola oil
- 1 large egg white
- 1 cup all-purpose white flour
- 3 Tbsp. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. baking soda

Preheat oven to 400 degrees F. Spray an 8-inch square baking pan with nonstick cooking spray.
In a small bowl, whisk together milk, cornmeal, oil and egg white. In a medium-sized bowl, whisk together flour, sugar, baking powder, salt and baking soda. Stir the cornmeal mixture into the flour mixture just until the dry ingredients are moistened; do not overmix. Immediately pour batter into pan, spreading to edges.
Bake for 20 to 25 minutes, or until golden and springy to the touch. Cool on a wire rack for 5 minutes before serving.
