Ingredients
- 2 Tbsp. olive oil
- 2 tsp. chili powder
- 1 tsp. ground cumin
- 1 tsp. paprika
- 1/2 tsp. salt
- 1/8 tsp. coarsely ground black pepper
- 2 large baking potatoes (3/4 pound each

Place an oven rack in the lower third of the oven and preheat to 400 degrees F.
In a medium bowl, mix together the oil, chili powder, cumin, paprika, salt, and pepper. Cut the potatoes in half lengthwise, then cut each half into long quarters. Toss with the oil mixture and place on a rimmed baking sheet, cut sides down. Drizzle any remaining oil over the wedges and bake for 10 minutes. Loosen the potatoes with a spatula and turn. Continue baking for a total of 30 minutes, or until the potatoes are very brown and crispy.
