Ingredients
- 2 cups smooth peanut butter
- 1 cup puffed rice cereal (such as Rice Krispies), optional
- 2 1/2 cups confectioners’ sugar
- 1 1/2 cups graham cracker crumbs (8 whole graham crackers)
- 1/2 cup packed light brown sugar
- 1/2 cup unsalted butter, melted
- 2 cups semisweet chocolate chips or 8 ounces semisweet chocolate, chopped
- 1 Tbsp. vegetable shortening
Preparation
Step 1
Line a 10x15-inch pan with aluminum foil or parchment paper.
Combine the peanut butter, optional rice cereal, confectioners’ sugar, graham cracker crumbs, brown sugar, and melted butter in a large mixing bowl and stir them together. Press the mixture into the prepared pan.
Melt the chocolate and shortening in a double boiler or in the microwave oven set on low.
Spread the melted chocolate mixture evenly over the peanut butter mixture. Refrigerate until firm. Cut the mixture into hefty 2-inch squares or use a cookie cutter to cut the mixture into interesting shapes.
