Ingredients
- roux
- 1 medium onion finely chopped
- 1 package pickled meat cut into pieces
- 4 cans sweet peas drain and save water
Preparation
Step 1
Start by making golden brown roux using 1 tablespoon of flour for each can of sweet peas. Just before roux is finished, use wire whisk to make roux creamy. Add onion and pickled meat to roux and cook until onions are tender. Add water from cans of sweet peas and additional water if needed. Cook water until gravy reaches desired thickness. Then add peas and just bring to a boil.
