Shrimp Stew

Ingredients

  • 2 pounds shrimp peeled and deveined
  • 1/2 cup flour
  • 1/2 cup oil
  • 1 cup onions
  • 1/4 cup parsley
  • 1 (15 oz) can tomato sauce
  • 1 can water
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Preparation

Step 1

Mix oil and flour for roux: in a microwave safe dish, microwave on high for 5 minutes and stir. Again microwave on high for 3 minutes and stir. Watch closely so it does not burn. Add onions, microwave for 1 minute, stir, microwave another 1 minute, and stir. Add tomato sauce, parsley, and water. Microwave for 10 minutes on high. Add shrimp and microwave another 15 minutes, stirring half way though.
