Shrimp Patties

Ingredients

  • 8 potatoes peeled
  • 1 1/2 pounds shrimp, peeled and deveined chopped
  • 1 small onion finely chopped
  • 1/2 cup parsley
  • 2 eggs beaten
  • salt & cayenne pepper to taste

Preparation

Step 1

Cut potatoes into chunks and boil until tender but not too soft. Mash potatoes, shrimp, onion, parsley, salt and pepper together. Shape into round patties. Dip patty into beaten eggs and fry in hot oil until golden brown, turning once. Mixture makes about 24 patties.
