COCONUT BREAD

Recipe from Juli Weishaar, founder of the Milk Bottle Quilting Co. in Odessa WA.
Ingredients
- 4 eggs
- 2 cups sugar
- 3 cups flour
- 1 cup buttermilk
- 1 cup oil
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 2 tsp. coconut extract
- 1 cup flaked coconut
- 1 cup chopped walnuts (optional)

Step 1
Beat eggs, add sugar,oil,coconut extract and salt, add buttermilk. Beat in flour, baking powder and baking soda. Then add flaked coconut and chopped nuts. Spoon batter into 2 greased 9 X 5 X3 loaf pans. (I use foil pans that come in a 3-pack)
Bake at 325 deg. for 1 hour and 15 minutes. Remove from oven and leave bread in pans. Run knife around edges and pour on hot syrup, letting syrup run down sides. Let stand for 4 hours before removing from pans.
SYRUP:
In a sauce pan combine 1 cup sugar,1/2 cup + 2 tbsp. water and boil for 5 minutes. Remove from heat and stir in 1 tsp. coconut extract
NOTE: If your want to change the flavor up a bit you can use 1 tsp. coconut extract and 1 tsp. almond extract in the bread.
