Ingredients

  • 4

    eggs

  • 2

    cups sugar

  • 3

    cups flour

  • 1

    cup buttermilk

  • 1

    cup oil

  • 1/2

    tsp. salt

  • 1/2

    tsp. baking soda

  • 1/2

    tsp. baking powder

  • 2

    tsp. coconut extract

  • 1

    cup flaked coconut

  • 1

    cup chopped walnuts (optional)

Directions

Beat eggs, add sugar,oil,coconut extract and salt, add buttermilk. Beat in flour, baking powder and baking soda. Then add flaked coconut and chopped nuts. Spoon batter into 2 greased 9 X 5 X3 loaf pans. (I use foil pans that come in a 3-pack) Bake at 325 deg. for 1 hour and 15 minutes. Remove from oven and leave bread in pans. Run knife around edges and pour on hot syrup, letting syrup run down sides. Let stand for 4 hours before removing from pans. SYRUP: In a sauce pan combine 1 cup sugar,1/2 cup + 2 tbsp. water and boil for 5 minutes. Remove from heat and stir in 1 tsp. coconut extract NOTE: If your want to change the flavor up a bit you can use 1 tsp. coconut extract and 1 tsp. almond extract in the bread.
