Miniature Pecan Pies

Ingredients

  • 3 ounces cream cheese
  • 1/4 pound margarine
  • 1 cup four
  • 1 pinch salt
  • 1 cup chopped pecans
  • 2 tablespoons butter
  • 2 tablespoons vanilla extract
  • 1 cup brown sugar packed
  • 2 eggs

Preparation

Step 1

Crust: Cream together cream cheese and margarine. Then add 1 cup flour & pinch of salt. Chill this mixture and then press into lining of miniature muffin pans. Combine filling ingredients and place filling in shells. Top each one with a whole pecan. Bake 25 minutes at 325 F until lightly browned. Cool 5 minutes and then remove from tins.
