Eclairs

Ingredients

  • 1/2 cup margarine or butter
  • 1 cup all-purpose flour
  • 4 eggs
  • Instant chocolate pudding
  • chocolate frosting

Preparation

Step 1

In a medium saucepan combine margarine or butter, 1 cup water, and 1/8 teaspoon salt. Bring to a boil. Add flour all at once, stirring vigorously. Cook and stir till mixture forms a ball that doesn't separate. Remove from heat. Cool 5 minutes. Add eggs, one at a time, beating after each addition till smooth.

Use teaspoon (length of about Half spoon w/about inch up) to drop batter, 3 inches apart, onto a greased baking sheet(pan).

Bake in a 400 degree oven about 30 minutes or till golden. Remove from oven and split tops and let cool.

Fill with pudding and frost**.
