Dirty Rice

Ingredients

  • 3 pounds chicken gizzards cleaned and ground
  • 2 pounds ground pork
  • 2 small onions finely chopped
  • 1 head celery finely chopped
  • 4 cups rice washed, not cooked

Preparation

Step 1

Clean top and bottom of gizzards by peeling off skin and grind gizzards in food processor. Cook pork ground meat and onions together. Add ground gizzards and celery and continue to cook until all is tender. Season to taste with salt. Add 4 cups of washed rice and enough water for cooking rice. Continue to cook until just before rice is completely cooked. Put in oven at 250 F for 1 1/2 hours, stiring after 1 hour.
