Coconut Cake

  • 1 whole coconut grated
  • 1 juice from freshly squeezed orange
  • sugar to taste
  • 1 egg white beaten
  • 1 box white cake mix

Step 1

Prepare cake mix per box instructions. Prepare 3 round cake pans by greasing inside of pan, bottom and sides, and lining inside bottom of pan with wax paper. Divide cake mix into 1/3 amounts into the 3 pans and bake as per box mix directions.

To make filling: combine grated coconut and orange juice. Add sugar to taste then add beaten egg white.

After cakes cool, remove from pans and remove wax paper. Divide filling into 1/3 amounts and make layers with cake and filling, starting with cake on bottom.
