Chicken Stew

Ingredients

  • flour
  • oil
  • chicken pieces
  • pork ribs
  • 1 large onion chopped
  • 3 stalks celery chopped fine
  • shallots chopped fine
  • 4 cloves garlic crushed finely

Preparation

Step 1

Clean chicken and season with salt and pepper. Deep fry chicken until completely cooked. Using equal amounts of flour and oil, make a golden brown roux. When roux is ready add celery and onions and cook until seasonings are tender. Also cook pork ribs in roux mix until browned. Add to roux water, chicken, garlic, and shallots. Cook on medium high heat until gravy is thickened.
