Chicken Casserole

Ingredients

  • 1 fryer chicken
  • 1 package spaghetti or 4 cups of rice
  • 1/2 can tomato sauce
  • 1 onion
  • 1/2 bell pepper
  • green onions and any other seasonings
  • Velveeta cheese grated
  • 1 can button mushrooms

Preparation

Step 1

Boil the fryer and debone it. Save the chicken broth. Boil the spaghetti or cook the rice. Make a little roux, not letting it get too dark. Add about 1/2 can of tomato sauce to the roux with a little bit of water or the chicken broth so it does not stick or get too thick. Add the onion, bell pepper, etc. Let this cook for about 10 minutes, then add the deboned chicken. Add as much of the chicken broth as you may need. In a casserole dish, put a layer of spaghetti or rice then a layer of the gravy, until the dish is full. Top with grated cheese and mushrooms. Cook in the oven for about 30 to 45 minutes.
