Ingredients
- 2/3 c onion, chopped
- 1/2 c finely diced bell pepper
- 1/4 c chopped celery
- 1 T oil or butter
- salt and pepper to taste
- 2/3 c long grain white rice
- 1 2/3 chicken broth

Step 1
In a skillet, cook the onion, bell pepper and celery in the oil until soft.
Stir in salt and pepper and the rice. Stir to coat the rice. Add broth and bring to a boil. Reduce heat and simmer, covered about 30 min until all liquid is absorbed.
