Ingredients

  • 1 cup yellow corn meal
  • 1 cup flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 1 cup cream style corn (8 3/4-oz. can)
  • 1/4 cup chopped onion
  • 2 tablespoons chopped green chilies
  • 2 tablespoons chopped pimiento
  • (alternatively use green and red chilies of your choice)
  • 1/4 cup butter
  • 1/2 cup shredded cheddar cheese (2 oz.)

Step 1

Preheat to 400°F.

Combine dry ingredients in bowl and mix well. Beat egg and milk together; add corn. Mix well.
Saute onion, chilies, and pimiento in butter in 9" cast iron skillet until onion is tender. Add to dry ingredients.
Place skillet in hot oven to preheat.
Add milk mixture and cheese to dry ingredients and onion mixture. Stir until just mixed.
Pour into pre-heated skillet and bake 35 to 40 minutes or until toothpick inserted in center comes out clean.
