Ingredients
- Icing:
- 1 stick butter
- 1/4 c. veg oil
- 2 Tbsp. sugar
- 3 oz. peach jello mix
- 1/4 c. water
- 1 egg
- 1 tsp. vanilla
- 2 small boxes french vanilla pudding mix
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 c. flour
- 2 Tbsp. peaches, diced (use canned...needs more than 2 Tbsp.)
- extra sugar for rolling dough in
- 1 c. powdered sugar
- 1 Tbsp. light corn syrup
- 2 Tbsp. milk
- 1/4 tsp. vanilla
Preparation
Step 1
Heat oven to 350 degrees.
Sift dry ingredients together except pudding mix and jello mix; set aside.
In mixing bowl combine all other ingredients except the peaches. Beat until thick and well combined. Add the sifted dry ingredients and mix well. Gently mix in the peaches. Chill dough for roughly 30 min so it's easier to handle.
Shape into balls and roll in sugar. Press them down gently with the bottom of a glass. Bake for 10-12 min. Cool on wire racks.
Whisk icing ingredients together; drizzle over cooled cookies.
