Lima Beans with Tomato Sauce

  • 1/2 lb. lima beans
  • 1 slice onion, chopped
  • 2 Tbsp. chopped raw carrot
  • 1 stalk celery, chopped
  • 1 clove
  • 1 tsp. sugar
  • 1 tsp. salt
  • 2 c. tomatoes
  • 1 Tbsp. shortening
  • 2 Tbsp. flour



Step 1

Soak beans overnight, drain and cook in boiling water until soft. Add onion, carrot, celery, clove, sugar and salt to tomatoes. Simmer 20 mins. and strain. Melt shortening, add flour and blend to a smooth paste and cook until thick, stirring constantly. Pour over beans and bake for a short time.
