Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 4 medium-size ripe bananas, mashed
  • 1/2 cup sugar
  • 1 large egg, lightly beaten
  • 2 tablespoons canola oil
  • 2 teaspoons vanilla extract
  • 1/2 cup chopped walnuts, toasted
  • Vegetable cooking spray
  • Light whipped cream cheese spread (optional)

Preparation

Step 1

Stir together first 4 ingredients in a large bowl; make a well in center of mixture.

Stir together bananas and next 4 ingredients; add to flour mixture, stirring just until dry ingredients are moistened. Gently fold in walnuts.

Pour batter into a 9- x 5-inch loaf pan coated with cooking spray.

Bake at 350 for 55 minutes to 1 hour or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes; remove from pan, and cool completely on wire rack. Serve with light whipped cream cheese, if desired.
