  • Egg Plant (when you read the prep instructions, you can figure from there about how many to get)
  • 1 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 egg
  • Some milk



Step 1

Peel egg plant and cut into pieces. Cook in salted water until tender. Drain and mash. Mix the 1 c. flour, 1 tsp. baking powder and add to mashed egg plant. Add the 1/2 tsp. salt, 1 egg and enough milt to make a good batter. Fry like cakes.
