  • 1/2 c unsalted butter
  • 1 3/4 c light brown sugar
  • 1 egg
  • 2 egg whites
  • 1 T vanilla extract
  • 1 1/2 c flour
  • 3 t baking powder
  • 3/4 t salt
  • 1/2 c chopped cashews or pecans if tolerated

Cooking time 55mins


Step 1

Preheat oven to 350 and cut oiled parchment to fit inside of an 8 in square pan. Line the bottom and sides with the paper, well buttered.
Measure brown sugar into large mixing bowl and add melted butter. Mix well with large spoon until no dry brown sugar remains. Stir in vanilla, egg and egg whites, mixing well until batter is an even consistency. Sift flour, salt and powder together, then stir into the sugar mixture. Stir in nuts. Pour into pan. Bate for 40-45 min. When cool, turn upside down to remove from pan and cut into squares.
