Veal or Chicken Cordon Bleu

  • 6 boneless chicken breasts
  • ham slices
  • process swiss cheese slices
  • 1 egg
  • 3/4 cup bread crumbs
  • Creamy Mushroom Sauce
  • 1/4 cup chopped onion
  • 2 TBSP butter
  • 1 TBSP flour
  • 1 4oz can sliced mushrooms (I prefer to use fresh)
  • 2/3 cup cream
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/2 cup sour cream
  • white wine



Step 1

Pound each piece of chicken to 1/8" thickness. Top each piece with a ham slice. Cut each cheese slice into 4 strips. Place three on each ham slice. Roll meat around cheese and secure with a toothpick. Mix egg and 2 tsp milk. Dip roll in egg, then roll in crumbs. Place seam side down in a 13x9 baking dish. Cover with foil.

Bake 350F - 1 hour

In a small saucepan, cook onion and fresh mushrooms in butter till tender but not brown. Stir in flour. Drain mushrooms. Stir in drained mushrooms, milk, salt & pepper. Cook and stir till thickened and bubbly. Cook and stir 1 to 2 minutes more. Stir in sour cream and wine to taste. Heat through. (Do not boil)

Maks about 1 1/2 cups
