Crockpot Potatoes

Ingredients

  • potatoes, peeled and quartered, enough to fill crockpot
  • salted water
  • 1 med. tub sour cream
  • 5 Tbsp. butter or margarine
  • 5-6 Tbsp. dried chives
  • Salt & pepper to taste

Preparation

Step 1

The night before, put the potatoes in the crockpot. Add slightly salted water to fill. Turn on high.

The next day, drain the water and put the potatoes in a large pot or Dutch oven. Add butter and mash with potato masher. Add sour cream and continue mashing and stirring until most lumps are out. Stir in the chives.

Return potatoe mixture to crockpot. Turn on high until it starts to get really hot, then reduce to low and keep on low until dinner.
