Sour Cream Potato Salad II

Make enough ahead to chill thoroughly. Can add salad greens to garnish or sliced black olives on top.

Ingredients

  • 4 c. diced cooked potatoes
  • 1/2 c. diced cucumber
  • 1 Tbsp. minced onion
  • 1/2 tsp. celery seed
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 3 hard cooked eggs
  • 1 1/2 c. sour cream
  • 1/2 c. mayonaisse or salad dressing
  • 1/4 c. vinegar
  • 1 tsp. regular mustard

Preparation

Step 1

Combine potatoes, cucumber, onion, celery seed, salt and pepper. Toss together lightly. Separate yolks from whites of eggs. Dice whites and add to potato mixture. Mash yoks and combine with sour cream, mayonnaise, vinegar and mustard. Add to potatoes and toss together lightly. Chill thoroughly before serving. Garnish with crisp salad greens if desired.
