Ingredients

  • Cookies:
  • 2 1/2 cups all purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup butter
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. ginger
  • 1/2 tsp. cardamom
  • 1/8 tsp. allspice
  • Eggnog Icing:
  • 1/2 cup unsalted butter
  • 1 1/2 - 2 cups powdered sugar
  • 1/4 cup eggnog
  • 1 tsp. vanilla extract
  • 1/4 nutmeg
  • 1/4 tsp. cinnamon
  • Pinch of salt

Preparation

Step 1

Preheat oven to 350.

Combine flour, baking soda, baking powder, salt and spices and mix together.
In a mixer, cream softened butter and sugar. Add eggs and vanilla. Mix until light and airy.
Slowly add dry ingredients to butter mixture and mix until it forms a ball. In a separate bowl, mix 1/2 cup sugar and 1 tsp. cinnamon.
Roll dough into 1" balls, roll in cinnamon mixture and place on a cookie sheet about 2 inches apart.
Bake for 12 - 14 minutes. Cool completely before icing.

Icing:

In a mixer, cream softened butter until smooth. Add 1 1/2 cups powdered sugar, 1/2 cup at a time. Once all sugar is incorporated, slowly add eggnog. Add spices and salt. Add icing sugar to desired consistency (thicker is better). Mix well and then spread on cookies.
