Ingredients

  • 2 TBSP butter
  • 2 whole chicken breasts
  • 1/2 cup dry white wine
  • 1 TBSP fresh parsley
  • 6 large oyster mushrooms
  • 1/2 seedless cucumber (sliced)
  • 1 green, red & yellow pepper (sliced)
  • 1 cup heated chicken broth
  • 1 TBSP cornstarch
  • 2 TBSP cold water
  • salt & pepper
  • sliced almonds

Preparation

Step 1

Melt butter over low heat. Add chicken, wine & parsley. Season with salt & pepper. Cover and cook 10 minutes. Turn chicken and add mushrooms, cucumbers and peppers. Cover and continue cooking 6-7 minutes. Remove chicken and keep warm in oven. Add chicken stock, bring to a boil uncovered. Mix cornstarch with water and then mix with stock.
