  • 3

    ripe pears, peeled and sliced

    c plus 2 T water

  • 6

    T brown sugar

  • flour

  • t baking soda

  • 1

    t salt

  • ¾

    t baking powder

  • t cinnamon

  • ¾

    t nutmeg

  • ½

    t allspice

  • ¾

    c butter softened

  • c sugar

In saucepan, combine pears, water, and brown sugar. Simmer covered for about 10 min, or until the pears are very soft. Remove from heat and putee pears in a blender or food processor. Set pear puree aside to cool. Preheat oven to 350. Combine flour, soda, salt, powder, and spices, mixing well, set aside. With electric mixer, beat butter and sugar together, then beat in eggs at med speed for two more min. Beat in the dry ingredients and pear puree alternately at low speed. Pour into paper bake cups, filling each about 3/4 full. Bake for 30 min or until top of the cupcakes spring back when touched. Cool completely before frosting. Excellent with Vanilla Cake frosting.
