Ingredients

  • Mix together in a large bowl:
  • 3 C rolled oats
  • 1/2 C sliced almonds
  • 1/2 C chopped pecans
  • 3/4 C coconut (sometimes I usually get the unsweetened bulk coconut from Whole Foods, sometimes I use Baker’s sweetened and sometimes a mix)
  • 1/3 C sesame seeds
  • (Normally I double this recipe. When I do, instead of 2/3 C sesame seeds, I use 1/3 C sesame seeds and 1/3 C flax seeds – and I grind up the flax seed.)
  • Mix the following “wet” ingredients together in a medium bowl:
  • 1/2 tsp salt
  • 5 TBL maple syrup (When I double the recipe, I use 9 TBL)
  • 5 TBL lt. brown sugar (When I double the recipe, I use 9 TBL)
  • 1/4 C canola oil
  • 2 TBL warm tap water

Preparation

Step 1

Prepare a baking pan by spraying or rubbing lightly with cooking oil (I rub lightly with canola oil).
Preheat oven to 275 degrees more or less depending on how crunchy or dry you end up liking your granola. (We originally started at 250.) I’ve been cooking at 325 lately for about an hour and 10 min. lately! I like it more crunchy these days…

Pour wet ingredients into oats and mix together… spread all into baking pan.
Cook about 35 min. (originally 30 min.. depends on your preference and oven).
Take out and mix up once…
Put back for another 35 min. cooking.
Immediately when you take granola out of the oven, mix in your preference of 1 cup raisins… or ½ cup raisins and ½ cup dried cranberries or some other combination.

I like it to dry out so I often leave it out overnight before putting it into my canister or into bags to give away.
