Hearty Beef Stew

  • 1 lb beef stew cubed
  • flour
  • 3 T olive oil
  • 4 c water
  • 1/2 t garlic powder
  • 1/4 t salt
  • 1 t dried parsley or chervil
  • 2 bay leaves
  • 1 c sliced carrots
  • 6 new red potatoes cut in chunks


Preparation time 10mins
Cooking time 70mins


Step 1

Dredge beef chunks in flour and shake off excess. In a skillet, brown beef in olive oil. Remove and place in a 2 qt covered saucepan.
Pour water into the hot skillet and scrape up the browned bits. Pour into the saucepan with the meat. Add garlic powder, salt, chervil, bay leaves, carrots and potatoes.
Bring to a boil then cover reduce to a simmer and cook 1 hour. Stir in a little flour and water to thicken if needed, removing bay leaves before serving.
