Basil Braised Beef Roast

  • lb beef roast

  • 2

    t cooking oil

  • 2 or 3

    large carrots, peeled and cut into chunks

  • 4

    med boiling potatoes, peeled and quartered

  • ½

    black pepper

  • 2

    t dried basil

  • ¼

    t garlic powder


In a heavy skillet, brown roast on all sides in oil. pierce with a fork on top and sides. Spray baking pan or casserole dish with PAM. Place roast in dish, surrounded by carrots and potatoes. Add 1 c water to hot skillet and scrape up crusty bits to make pan juices. Pour the pan juices over meat and potatoes. Sprinkle top of meat with pepper basil and garlic powder. Insert meat thermometer and bake uncovered at 325. About 1 1/2-2 hrs. Should be 160 when done. Once or twice turn the potatoes so that they are in the meat juices.
