Ingredients
- 1/4 cup oil
- 2 tablespoons butter
- 1 cup onion, chopped
- 1 garlic clove, minced
- 4-6 stalks celery
- 2-4 carrots, chopped
- 3 whole chicken breasts (steam or boil in water) then shred with fork
- 1 teaspoon each- cumin, chili powder, salt
- 1 can stewed tomatoes
- 1 can Rotel tomatoes and green hot peppers
- 4 cups chicken broth
Preparation
Step 1
Saute vegetables until soft. Add above to sauteed vegetables and simmer. May add toppings: sour cream, jack cheese, salsa, chopped avocados
