Ingredients
- 1 16-oz. can sweetened condensed milk
- 1/2 c. lemon juice
- Grated rind of 1 lemon -OR
- 1/4 tsp. lemon extract
- 2 eggs, separated
- 2 Tbsp. sugar
- Baked 8" pie crust

Preparation
Step 1
Blend milk, lemon juice, grated lemon rind or lemon extract and egg yolks. Cover with meringue made by beating egg whites until stiff but not dry and adding sugar. Bake in 350 oven 10 mins or until brown. Chill.
