Citrus Pork Tenderloin

Ingredients

  • 1 tsp dried thyme
  • 1/2 tsp cayenne
  • 1 tsp allspice
  • 1/2 tsp nutmeg
  • 2 tbsp olive oil
  • 1 pork tenderloin, whole
  • 1 medium red onion, chopped
  • 1 red bell pepper, julienned
  • 2 medium oranges (1 juiced, 1 sliced)
  • 2 tbsp frozen orange juice concentrate, thawed
  • 1/4 cup white wine
  • 1 tbsp finely chopped green onion
  • 1/2 cup chopped fresh mint
  • 1/2 cup chopped fresh parsley
  • 1/2 tsp black pepper
  • 2 tbsp orange zest

Preheat oven to 400°F.

In a bowl, mix together thyme, cayenne, allspice, and nutmeg. Rub on pork. In a deep saute pan, heat oil and brown pork for about 3 to 4 minutes. Remove pork from pan; add onion and red pepper. Saute for about 3 minutes; add juice of 1 orange, orange juice concentrate, wine, green onion, mint, parsley, and black pepper. Mix well and add tenderloin; simmer for about 10 minutes. Add orange zest; continue to simmer until liquid is reduced by half.

Place pork in an ovenproof pan and add sauce; bake for 5 to 7 minutes. Remove pork and let rest. Slice pork on a bias. Garnish with orange slices and serve.

Variation: Replace pork tenderloin with boneless chicken breasts or turkey cutlets.
