Chicken & Rice Soup with Spinach & White Wine

  • 3 tbsp olive oil
  • 2 stalks celery, chopped
  • i small red bell pepper, chopped
  • 1 medium red onion, chopped
  • 2 cloves garlic, chopped
  • 1/2 cup dry white wine
  • 3 cups finely chopped spinach
  • 2 cups cubed cooked chicken
  • 1/2 cup rice
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/2 tsp dried rosemary
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • i bay leaf
  • 7 cups low-fat chicken stock

Step 1

In a large soup pot, heat oil. Add celery, red bell pepper, onion and garlic; saute for 2 minutes, or until onion is translucent. Pour in wine; simmer until mixture is reduced by half. Add spinach, chicken, rice, basil, oregano, rosemary, salt, black pepper, bay leaf and stock. Bring to a boil; reduce heat and simmer for 15 minutes. Remove bay leaf and serve immediately.
