Old-Fashioned Rice Pudding

Ingredients

  • 1 c. rice
  • 6 c. milk
  • 3 eggs
  • 1/4 tsp salt
  • 1/2 c. sugar
  • cinnamon

Preparation

Step 1

Put rice in top of double boiler. Add milk. Cook over hot water, stirring about every 15 mins. When rice is soft in about an hour, stir together in a bowl the eggs, salt and sugar. Turn off heat under bouble boiler and stir a little of the hot mixture into the egg mixture to prevent curdling. Slowly add egg mixture into the rice and stir thoroughly. Serve with cinnamon sprinkled on top.
