Slow Cooker Chicken Gumbo

I love Cajun/Creole food. I'm willing to try most recipes. At present, this is my favorite. I used thigh meat for this. I also doubled the rice, giving me another dinner tomorrow. I used brown rice to try to keep it low carb.

Ingredients

  • 1

    lb Chicken Breasts skinless & boneless

  • 10

    oz Okra frozen

  • 2

    Andouille sausages sliced

  • 1

    c Onion chopped

  • 2

    ea Celery stalks chopped

  • 1

    Green pepper seeded & chopped

  • 1

    t Thyme dried

  • 1

    t Oregano dried

  • 2

    Bay leaves

  • ½

    t Onion powder

  • ½

    t Garlic powder

  • ½

    t Mustard powder

  • ½

    t Cayenne pepper

  • 2

    c Chicken stock

  • 2

    c Tomato juice

  • 2

    c Rice cooked

Directions

Add all ingredients, except the rice, to slow cooker & mix well. Cover & cook low for 8 hrs, or high for 4 hrs. Serve over rice or just add rice for about 15 mins to warm through.
