Slow Cooker Chicken Gumbo
I love Cajun/Creole food. I'm willing to try most recipes. At present, this is my favorite. I used thigh meat for this. I also doubled the rice, giving me another dinner tomorrow. I used brown rice to try to keep it low carb.

Ingredients
- 1 lb Chicken Breasts skinless & boneless
- 10 oz Okra frozen
- 2 Andouille sausages sliced
- 1 c Onion chopped
- 2 ea Celery stalks chopped
- 1 Green pepper seeded & chopped
- 1 t Thyme dried
- 1 t Oregano dried
- 2 Bay leaves
- 1/2 t Onion powder
- 1/2 t Garlic powder
- 1/2 t Mustard powder
- 1/2 t Cayenne pepper
- 2 c Chicken stock
- 2 c Tomato juice
- 2 c Rice cooked

Step 1
Add all ingredients, except the rice, to slow cooker & mix well. Cover & cook low for 8 hrs, or high for 4 hrs. Serve over rice or just add rice for about 15 mins to warm through.
