Grape Butter

Really good made with Concord grapes. Can be frozen and thawed as needed overnight in the refrigerator. Makes about 3 1/2 c.

Ingredients
- 6 lbs. grapes
- 1/4 c. water
- Honey to taste (optional)
Preparation
Step 1
In a large, heavy-bottomed kettle, combine grapes and water. Cook for about 30 mins. mashing and stirring frequently.
Run the mixture through a food mill to remove the skins and seeds, then return the mixture to the kettle, and cook, stirring occasionally till thick, about 2 hrs. Depending on the nature of the grapes, you might want to add honey.
