Ingredients

    28-oz can tomatoes, with juice, chopped

  • 2

    medium plum tomatoes, chopped

  • 2

    stalks celery, chopped

  • 1

    red bell pepper, chopped

  • 1

    green bell pepper, chopped

  • 1

    small cucumber, diced

  • 1

    small onion, chopped

  • ½

    cup chopped fresh parsley

  • 2

    tbsp chopped fresh basil i tbsp chopped fresh dill

  • 1

    tbsp chili powder

  • ½

    tsp black pepper

  • ½

    tsp salt

  • 4

    cups vegetable stock

  • 2

    cups tomato juice

  • 2

    tbsp red wine vinegar or lemon juice

Directions

In a large bowl, stir together well canned tomatoes and their juice, plum tomatoes, celery, red and green peppers, cucumber, onion, parsley, basil, dill, chili powder, black pepper, salt, stock, tomato juice and vinegar. Refrigerate for at least 1 hour before serving. Serve cold.
