Avocado Luncheon Ring

Ingredients

  • 1 Tbsp. (1 envelope) unflavored gelatin
  • 1/4 c. cold water
  • 1/2 c. hot water
  • 1 c. sieved avacado
  • 2 Tbsp. lemon juice
  • 3/4 c. diced celery
  • 1 pimiento, diced
  • 1/2 c. mayonnaise
  • 1/2 tsp. salt
  • Tuna or Chicken Salad

Preparation

Step 1

Soften gelatine in cold water. Dissolve in hot water. Chill until partially set, add avacado combined with lemon juice, blend thoroughly. Fold in remaining ingredients, except salad. Pour into 8 individual ring mods and chill. Unmould on lettuce and fill center with tuna or chicken salad.
