Tex Mex Scotch Eggs
Meatball stuffed with an egg and a kick. I've never had scotch eggs before, but I will again.

Ingredients
- 2 Hard boiled eggs
- 6 oz Ground Beef (the leaner, the dryer it will be.)
- 1/8 t Chipotle powder
- 1/8 t Cumin
- 1/8 t Smoked Paprika
- S&P to taste

Step 1
Preheat oven to 375F. Thoroughly mix the seasonings into the ground beef. Flatten 3 oz of ground beef with your hands. Lay egg on top of it & form the beef around the egg to enclose it completely. Repeat for other egg. Bake for 20-30 mins., or until the beef is cooked through.
Serve hot.
