Filled Oatmeal Cookies

Ingredients

  • Filling:
  • 1 c. brown sugar
  • 2 c. Quaker Oatmeal
  • 2 eggs
  • 1/2 c. shortening
  • 1 tsp. baking soda
  • 1/2 c. butter
  • 1 1/2 c. flour (after being sifted once)
  • 1 c. walnuts
  • 1/2 lb. dates chopped fine or ground
  • 3/4 c. sugar
  • 1/2 c. water
  • Juice of 1/2 lemon

Preparation

Step 1

Cream sugar and shortening. Add well beaten eggs, oatmeal and flour to shich soda has been added. Add nuts last. Chill in refrigerator overnight. Roll think, using a small glass to cut out cookies. Bake for about 10 mins. in 375 oven. When baked and cooled, put two together with the filling. Roll in powdered sugar before serving.
