Ingredients
- 3 cups sugar
- 1 cup vegetable oil
- 4 eggs
- 1/2 cup water
- 3 1/2 cups flour
- 2 tsp. soda
- 4 tsp. cinnamon
- 1 1/2 tsp. salt
- 2 cups pumpkin
- 1 cup chopped pecans

Reserve 2 Tbsp. flour to dredge pecans. Mix sugar and oil. Add eggs one at a time, beating after each addition. Add water. Sift flour, soda, cinnamon and salt; add to mixture. Beat in pumpkin. Add nuts and mix well.
Pour in bread pans. Bake at 350 degrees for 1 hour. Cool slightly. Turn out on rack to finish cooling. Flavor is best if baked day before using. This keeps for weeks in refrigerator or freezes beautifully.
