Orange Refrigerator Cake

Ingredients

  • 4 c fresh orange juice
  • 1/3 c lemon juice
  • 2 -12oz pkgs lady fingers
  • 1 c heavy whipping cream
  • 1 1/2 c sugar
  • 3 -.25 oz pkg unflavored gelatin
  • 1/8 t salt
  • 1 c diced orange segments
  • 1 pint fresh strawberries

Preparation

Step 1

Line the bottom and sides of an 8 in spring form pan with ladyfingers.

Mix 1 c orange juice and the sugar in a saucepan. Heat and stir until sugar has dissolved. Remove from heat.

Mix the gelatin in 1 c of orange juice and then stir into the hot juice. Add the remaining 2 c of orange juice, 1/3 c lemon juice and the salt into the hot juice m ix. Chill until slightly thickened.

Whip the cream until stiff and then fold into the orange juice and gelatin mix. Gently mix the orange sections.

Pour the mixture into the prepared pan. Chill for at least 4 hours. Remove sides of pan and place on a serving plate. Garnish with strawberries.
