Ingredients

  • 1 lb ground beef
  • 1 cup onion finely chopped
  • 1 lb polish sausage cut in bite size pieces
  • 2 15 oz cans black=eye peas undrained or 2 bags frozen
  • 1 14 oz can beef broth
  • 1 140z can diced tomatoes undrained
  • 1 100z can rotel undrained
  • 1/8 teaspoon salt
  • 1 to 2 jalapeno chilled seeded and chopped optional
  • 2 to 3 cups water

Preparation

Step 1

place a dutch oven or large pot over medium-high heat
add ground beef and onions and cook until beef is browned stirring frequetly
drain excess grease
add remaining ingredients mix well
bring to a boil reduce heat and cover tightly
simmer 45 minutes

Tip the longer the soup sits the better the flavors will blend
